Chicken Seekh Kabab
Grilled minced soft, juicy and spicy chicken on skewers. Delicious barbecue.
Seekh kebab is a type of kebab, popular in South Asia, made with minced or ground meat with spices, usually lamb, beef or chicken, formed into cylinders on skewers and grilled. It is usually cooked on a mangal or barbecue, or on a tandoor.

Ingredients:
Minced Chicken (Kheema) - ½ kg
Egg yolk - 2
Cashew nut - 8-10 pieces
Garlic - 6-8 cloves
Ginger - 1-inch piece
Green Chiles - 2-3
Fresh Coriander - ¼ cup
Garam Masala - 1 teaspoon
White Pepper - 1 teaspoon
Butter - 2 tablespoons
Lemon juice - 1 tablespoon
Chaat Masala - 1 teaspoon
Salt to taste
Method:
Soak the cashews in warm water for about 10 minutes. Grind into a fine paste.
Grind the ginger, garlic, green chilies and coriander into a fine paste. Do not add water for grinding.
Mix the above pastes (the ginger-garlic paste and the cashew paste) with the egg yolk. Add this mixture to the minced chicken along with salt, pepper, and garam masala. Mix well.
Marinate for ½ hour.
Take the chicken mince mixture and divide it into 10-12 equal parts. Carefully roll each part around the skewer lengthwise. This should look like long tubes around the skewer. Put it to grill.
Keep rolling and drizzling with butter at regular intervals.
Once the outer skin of the skewers looks good brown and well cooked, your skewers are ready.
To garnish sprinkle lemon juice and chaat masala.
Serve hot with green chutney.
